I LOVE this banana bread, it’s so easy to make and really is a great on the go snack, breakfast or dessert!
Ingredients
- 3 ripe bananas
- 100g coconut sugar
- 75ml oil (coconut or vegetable will work) or apple sauce
- 210g self-raising flour
- 2 tsp baking power
- 1 tsp cinnamon
- 50g seeds, I use Whitworths simple add salted caramel mixed seeds!
Method
- Preheat oven to 180c (fan)
- Mash the bananas until smooth.
- Add coconut sugar and oil, and mix well.
- Add the flour self-raising flour, baking powder and cinnamon, and mix.
- Stir in the seeds until well distributed.
- Pour into a lined baking tin, then sprinkle some more seeds on top
- Bake in the oven for 40-45 minutes. Check it while it is baking, if the top is going too brown then cover with tin foil.
- To check it’s cooked stick a skewer in it, if it comes out clean it’s done!
- Leave to cool for 20 minutes then ENJOY! I love mine with peanut butter on!
