CarrOATS

I get asked on a daily basis for my carrOATS recipe, and although it is in fact in my story highlights – that may not be so obvious and has probably changed a bit! So here it is for you all to see…

Ingredients (serves 1)

  • ½ medium carrot grated
  • 50g porridge oats
  • 1 banana
  • 1tsp cinnamon
  • 1/2tsp ginger
  • 1/2tsp turmeric (optional)
  • 1tsp vanilla extract
  • 1 cup water (or milk, or a mix)
  • Chia seeds, peanut butter and berries for topping (recommended)

Instructions (Hob):

  1. Add all the ingredient (but half of the banana) to a suitable pan on a medium heat.
  2. Allow to simmer for 5 minutes, stirring regularly to make sure it doesn’t stick to the bottom!
  3. Check taste – if you want it sweeter, add a teaspoon of maple syrup or a sweetener of choice!
  4. Serve up topped with the rest of the banana, and other toppings of choice!
With Tumeric

Instructions (microwave):

  1. Add all the ingredients (saving half the banana) to a microwave safe bowl, and stir.
  2. Microwave on full power for 2 minutes then remove and stir. Before microwaving for a further 1 minute.
  3. Remove from the microwave and give it a stir, this helps to thicken it up! Then add your choice of toppings!

Same goes for both – if you prefer to have your oats a bit runnier add more water/milk!
